This lasagna soup it is ideal for children's food. In this recipe from Guiainfantil we have added a few mini-meatballs of minced meat, so that the little ones can chew, like small pieces. Another suggestion: you can make this soup with the leftovers of some lasagna. You would only have to add the meat broth and that's it. How about?
- 8 lasagna sheets
- 300 gr. minced meat (beef or pork)
- ½ liter of meat broth
- 1 chopped onion
- 1 green bell pepper, chopped
- 3 garlic cloves, minced
- 1 tomato in pieces
- 1 can of tomato sauce
- 100 gr. grated Parmesan cheese
- 100 gr. grated mozzarella cheese
- Olive oil, parsley and salt
1- In a pot, heat a little oil and sauté the pieces of garlic, onion, pepper and tomato. Add half of the minced meat. When they are done, add the meat broth.
2- When the meat broth starts to boil, add the lasagna sheets in pieces.
3- While the pasta and the other ingredients are being made, place the rest of the meat in a bowl and mix it with chopped parsley and salt. Make small meatballs and reserve.
4- When the pasta is done, add the mini-meatballs to the soup, the mozzarella cheese, the tomato sauce and the salt (according to taste). When it boils again, the soup is done. You just have to sprinkle with the grated cheese, period.
