The Roscón de Reyes is a Spanish tradition, a delicious sweet that is eaten with hot chocolate to celebrate the arrival of the Three Kings on the night of January 5. With this recipe, you will even forget about the gifts.

Making our own homemade Roscón de Reyes may seem complicated, but surely with this simple step-by-step recipe you will achieve a spectacular result that children will love. Cheer up, surely you will not regret it and the Kings will know how to reward you.

  • 130 gr. of strength flour + 450 gr.
  • 70 gr. milk + 60 gr.
  • 10 gr. fresh yeast + 20 gr.
  • 1 teaspoon of sugar
  • 70 gr. butter or margarine
  • 120 gr. Icing sugar
  • 1 lemon and 1 orange
  • 2 eggs + 1 egg
  • 30 gr. orange blossom water
  • Salt, candied fruits and almonds

1. Mix the icing sugar with the orange and lemon zest to form a flavored sugar. Remove and reserve.

2. We start by mixing the ingredients of the sourdough: 130 gr. of strength flour, 70 gr. of milk, 10 gr. of fresh baker's yeast and a teaspoon of sugar. Knead by hand for about ten minutes.

3. When it is well united, make a ball with the dough. Put the ball in warm water to cover it. When the dough floats and has doubled in volume, in about 10-15 minutes, it is ready.

4. Now make the main mass. To the flavored sugar add 450 gr. of strength flour, 60 gr. of milk, 20 gr. fresh yeast, 70 gr. butter, 2 eggs, 30 gr. of orange blossom water and a pinch of salt. When it is well mixed, add the sourdough and integrate both until homogeneous. Let it rest for 1 hour and a half.

5. After this time, knead again for a while, approximately 10 minutes. (You will notice that it lowers the volume, it is normal). On a floured or oiled surface, shape the dough into a ball, smoothing it with your hands. Place the ball on the baking sheet lined with parchment paper. To form the roscón, insert your fingers in the center and open the dough so that the central hole is quite large. (Put a little oil on your hands, you will work it better. The dough that comes out doubles in the oven, therefore, it is better that you make two roscones with this dough and not one.

6. Preheat the oven to 200ºC. Paint with beaten egg and garnish with the candied fruits, the filleted almond and the moistened sugar. Let it rest again until it doubles in volume again. Bake between 25 and 30 min., During the last 5 minutes lower the temperature to 180ºC.
